The CAS number of this type of mustard oil is 8007-40-7,
and the CAS number of pure Allyl isothiocyanate is 57-06-7.
This component Allyl sulfide is found in the whole onion family,
hence their consumption can greatly help to fight breast cancer.
They may be homopolymers of acrylic acid, crosslinked with an Allyl ether pentaerythritol,
Allyl ether of sucrose or Allyl ether of propylene.
The primary smelly culprit
here has been found to be Allyl methyl sulfide, which is passed into the blood during the digestive process.
By distillation one can produce a very sharp tasting essential oil, sometimes called volatile oil of mustard,
that contains more than 92% of Allyl isothiocyanate.
So not only does your whole body smell like you're wearing a stinky perfume, but, as you breathe,
the air goes into your lungs and is contaminated by the Allyl methyl sulfide;
Allyl isothiocyanate serves the plant as a defense against herbivores;
since it is harmful to the plant itself, it is stored in the harmless form of the glucosinolate, separate from the myrosinase enzyme.
